Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Quaternary sanitizer at triple sink not dispensing properly. Showed dishwasher how to hand-mix until both can be repaired. Facility will use triple sink for ware washing.

Openings to the outside for equipment, such as ventilation fans, not screened or otherwise protected when the equipment is not in operation. Air curtain was turned off while service window was in use. Maintenance turned on the air curtain.
