Observed ham and cheesecroissant (112F - Cold Holding); ham croissant (102F - Hot Holding); spinach pastry (102F - Hot Holding). Per operator was placed in hot holding unit at 8:30am. Operator increased warmer to 135°F.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in Front area spinach pastry (71F - Cold Holding); ham and cheese crossiant (81F); ham croissant (80F - Cold Holding). Per operator placed in at 8:30am.

As per operator, less than 30 minutes. Operator placed in other cooler. Observed reach in cooler with ambient temp of 48F. The following tcs foods stored inside for less than 4 hours: milk (60F - Cold Holding); whipped cream (47F - Cold Holding); pumpkin puree (47F - Cold Holding). Operator turned cooler down a few degrees.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed butter (73 F - Cold Holding) at preparation area. As per operator the product was outside for 30 minutes while preparing sandwiches. Operator moved the butter to the reach in cooler for rapid cooling.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed spinach empanadas (125 F - Hot Holding); chicken empanadas (127 F - Hot Holding) at hot box front counter. As per operator for about one and half hours. Operator tuned up the temperature to reheat the products.
Whole fruit displayed for self-service not wrapped and no utensils provided. Observed apples at front counter for customer self-service not wrapped.
