Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee grab squash that fell on floor with gloved hand and proceeded to continue to cut squash. Inspector intervened with employee regarding hand washing. Employee removed gloves and washed hands properly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in stand alone cooler Cole Slaw (44F - Cold Holding); Raw chicken (44F - Cold Holding) at the bottom. Fan at the very top, cooler in defrost and employee stated they were in/ out of cooler. Cooler had items above the blocked air flow to raw chicken and Cole slaw. Food stored in walk-in cooler Cooler had ambient temperature of 39F. Manager removed Cole slaw and raw chicken from cooler and placed in walk in cooler.
