Employee stated TCS foods were in cooler from previous day. Cooler has an ambient temperature of 51F.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in reach in cooler near drive Cut lettuce (52F - Cold Holding); House made banana pudding (54F - Cold Holding); House made Ranch dressing (54F - Cold Holding). Employee stated TCS foods were in cooler from previous day. Cooler has an ambient temperature of 51F.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At 11:45am found brisket (99-115F) stored in hot box on cook line by stove. Manager stated brisket was cooked at 9am and placed in hot box to hold hot. Manager moved brisket to oven and began reheating it.
