Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Cooked pasta cooling while covered, per employee pasta began approximately 12:00pm, 69F at 2:15, down to 68F at 2:45. Manager had pasta uncovered and spread thinly to cool.
