Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler where hot food is prepared, Observed cooked chicken (47F - Cold Holding); cooked rice/quinoa (52F - Cold Holding). Operator stated foods are moved to top of reach in when establishment opens at 10am. Operator reduced the amount of product below fill line.
Wet mop not stored in a manner to allow the mop to dry. Operator hung mop.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Discussed with operator that there must be a proper handwash before putting on gloves when food handling. Operator removed gloves, washed hands, and put on new gloves.
Raw animal food stored over/not properly separated from ready-to-eat food. In the white stand alone fridge next to food prep line, observed a container of raw chicken stored above a container of ready to eat granola and container of juice. Operator rearranged for proper storage.

Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. At triple sink, observed dishes being washed without approved sanitizer step. Operator purchased approved sanitizer at time of inspection, set up triple sink quaternary 300ppm.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In the stand alone black fridge 4th from the row of fridges there is packs of raw chicken placed above raw beef. In reach in cooler near cook raw shelled eggs placed above chopped ready to eat broccoli. Operator rearranged for proper storage.
Toxic substance/chemical improperly stored. A spray bottle of Clorox was placed above napkins, a bottle of bleach was next to packs of bottled water, and bleach placed above candy in the storage area. Operator moved all chemicals to proper storage
Handwash sink not accessible for employee use at all times. In the cook area the hand washing sink is not easily accessible for proper hand washing. The reach in cooler is positioned too close for employees to access the handwashing sink properly. The handwashing sink is also missing paper towels. Operator added paper towels and rearranged to allow easy access to handwashing sink.
No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. No sanitizer for ware washing in establishment. Operator purchased approved quaternary sanitizer at time of inspection.
