Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed SM Restaurant Inc (Bosphorous Turkish Cuisine) license #5814283 with a submitted a HACCP plan for ROP, Sous Vide Packaging, and Cook-Chill Packaging, but has not yet been approved. The establishment is receiving product from their commissary location and must add this location to their HACCP plan.
