Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed a case of raw chicken sitting on a reach in freezer at 50F, operator stated has been sitting out for 30 minutes, operator placed in reach in cooler to bring back down to 41F.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed ground beef (101F - Hot Holding), cook states ground beef was cooked 2 hours ago., food must be served or discarded by 430pm.
Establishment conducts non-continuous cooking of raw animal foods without written procedures approved by the division. Observed wings cooling at 81F and cook says they were only blanched. Cook finished cook to at least 165F then recooked. Will no longer blanch, but will fully cook to 165F or hotter then cool from 135F to 70F within 2 hours and from 70 to 41F within 4 more hours.

Employee experiencing persistent sneezing, coughing, runny nose, or discharge from eyes working with food, clean equipment or utensils, and/or unwrapped single-service items. Observed cook coughing while cooking.
Employee in kitchen carrying child in one hand opening cabinets with the other. No unauthorized personnel allowed within the kitchen work area. Only employees on duty shall be allowed within the kitchen and prep areas of the establishment.
