Commercially processed reduced oxygen packaged Scallops on the half shell bearing a label indicating that it is to remain frozen until time of use and not removed from reduced oxygen package, observed thawing on rack at speed rack in kitchen.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed in use spoons in standing utensil water 75F at cutting board opposite cookline in kitchen.

Soiled dry wiping cloth in use. Observed soiled dry wiping cloth stored on shelf at food prep table in kitchen.
Time/temperature control for safety food thawed in an improper manner. Observed frozen octopus, frozen shrimp, frozen scallops on the half shell, and frozen fish thawing at room temperature on trays at the speed rack in the kitchen. Operator moved foods to walk in cooler.
