Operator stated ambient temperature of cooler was 38F earlier today. Food has been moved to walk in cooler. Cooler is to not be used until it is working properly. Sitting on counter: Pizza 74F, Pizza 73F. Operator states he is using time as a public health control but there is no plan or time stamp for the pizza. Operator was able to determine when pizza was brought out of temperature and places time stamps on both.
