Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed raw fish in make table thawing in reduced oxygen packaging not removed from package. Operator cut open bags during inspection.
Hood filter missing from automatic fire suppression/exhaust system. Observed one hood filter missing above fryers.
In-use tongs stored on equipment door handle between uses. Observed tongs on door handle of oven. Operator removed tongs.
Time/temperature control for safety food thawed in an improper manner. Observed 2 cases of frozen chicken thawing at room temperature under counter across from three compartment sink. Operator placed chicken into a large container and placed under running water.
Working containers of food removed from original container not identified by common name. Observed bulk rice removed from package stored in plastic bin with no label on cook's line.
