Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the front cook line flip top reach in cooler; cut lettuce (46F - Cold Holding); cut tomatoes (45F - Cold Holding); cheese (45F - Cold Holding); sausage (46F - Cold Holding); ham (46F - Cold Holding); turkey (45F - Cold Holding). Per operator the flip top reach in cooler was left open during lunch rush 45 minutes before inspection. Operator placed ice on all time/temperature control food for safety in the reach in cooler.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer solution on the bottom shelf of the front cook line, Sanitizer Bucket (Quaternary 500+ppm) dies the strip dark blue. Operator adjusted the Sanitizer Bucket to (Quaternary 400ppm).
Food-contact surface soiled with food debris, mold-like substance or slime. Can debris on the cook line no longer in use per the operator has debris behind the blade. Front line cutting board has food residue staining building up.
Carbon dioxide/helium tanks not adequately secured. In the storage room to the side of the kitchen entrance, one carbon dioxide tank stored without being secured. Operator secured the tank.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Metal pots stored hanging over the warewashing area not inverted or covered. Operator inverted the pots.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee pre workout powder stored on top of bottled drinks at the entrance to the kitchen. Operator relocated the employee items.

Opened employee beverage container in a cold holding unit with food to be served to customers. Opened employee beverage in the front line flip top reach in cooler. Operator voluntarily discarded the open employee beverage.

Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Shell eggs sitting in container on prep table for breakfast for 2.5 hrs per person in charge at 75F ambient. Person in charge moved to reach in cooler. Recommend holding item on time.
