Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the front cook line flip top reach in cooler; cut lettuce (46F - Cold Holding); cut tomatoes (45F - Cold Holding); cheese (45F - Cold Holding); sausage (46F - Cold Holding); ham (46F - Cold Holding); turkey (45F - Cold Holding). Per operator the flip top reach in cooler was left open during lunch rush 45 minutes before inspection. Operator placed ice on all time/temperature control food for safety in the reach in cooler.
