Raw animal food stored over/not properly separated from ready-to-eat food. Observed Raw fish and steak over radishes, cilantro and tomatoes reach in cooler. Operator stored properly.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. gouda and Serrano pepper biscuits (house made) (89F - Cooling) at 10:50 since 10:20 - 89F 11:15 Observed covered sitting out on counter. At current rate of cooling product will not reach 70F within 2 hours. Operator decided to use time control. Per operator, out of temperature for 30 minutes. Operator placed time stamp for remaining 3.5 hours. Time control procedure sent to operator.
