Operator stated they had just opened and prepared cheese 30 minutes prior and moved it to cooler bottom section of reach-in cooler. Checked temperature 40 minutes later temperature was 42F. Repeat 7-7-23

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine at 000 parts per million chlorine sanitizer. Observed operator primed sanitizerand was able to get dishwasher machine working correctly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed the following items out of temperature at make tables by pizza oven: pork roll (62F - Cold Holding); sliced turkey (61F - Cold Holding); butter (72F - Cold Holding); cream cheese (44F - Cold Holding). Observed operator closed lids on refrigerator make tables and move pork roll to Walk-in cooler and discarded butter. Recheck temperatures 40 minutes later Pork roll 41F, sliced turkey 40F, cream cheese 41F.
