Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach-in cooler on cook line for 30 minutes: house made ranch at 73f, and cut cabbage at 71f. Operator put cabbage in ice bath, and ranch in walk-in cooler. Cabbage at 64f after 20 minutes.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Reach-in cooler on cook line is not cooling. Per operators, cooler is down and in need of a part and should be repaired by end of day. Operators began implementing an ice bath for items in reach-in cooler.
Food stored on floor. Sauce buckets and in use frying oil canisters stored on floor in kitchen. Operators moved items off floor during inspection.
Storage of maintenance equipment/tools in areas that may result in cross contamination of food, equipment, utensils, linens and/or single-service and single-use articles. Tools stored over cooling food on speed rack in kitchen. Operator corrected storage during inspection.

Observed: Dead roaches on premises. Observed 20 dead roaches in the following locations: 14 under produce storage racks/ prep tables, four under cooking area, and two by back door. Operators began cleaning and sanitizing floor during inspection. Per new owner, pest control sprayed yesterday. Priority: Basic
Observed: Food stored on floor. Jugs of oil stored on floor by back door, and buckets of soy sauce stored on floor between walk-in cooler and walk-in freezer. Priority: Basic
