Dishmachine quaternary ammonium sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed : 0 ppm for quaternary ammonia. A jug was added and achieved 200 ppm.

The lid had been left open after lunch, which is across from the cook line. The back of house is having Air conditioner problems, which are being addressed by a tech here earlier today. A vent for the area is planned. ICe was added to the shredded cheeses and dropped to 46, 45° in 10 minutes.
