In flip top cooler on cook line, Sliced Cheese (49 F - Cold Holding); per operator, food not prepped or portioned today. Food held in cooler for approximately 20 minutes. Cheese slices sitting atop pan in flip top cooler, not directly in pan. Operator moved cheese to sit in pan to reach cold holding proper temperature.
