At glass display case, macaroni salad (45F - Cooling @9:35, since 7:30am)45F @ 10:07; chicken salad (45F - Cooling @9:35, since 7:30am)45F @10:07. At this rate, items will not cool to 41F within 4 hours. Advised operator to place items into walk in. Operator place items into walk in to fascilitate cooling.
In-use knife/knives stored in cracks between pieces of equipment. At front counter, I use knives stored underneath equipment. Operator removed.
