Raw animal food stored over/not properly separated from ready-to-eat food. Raw shell eggs stored over ready to eat desserts in the reach in cooler on the 2nd floor. Owner removed the eggs. Raw chicken stored over cooked veal in the reach in cooler on the cook line. Owner placed the chicken below the beef.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. All the following items were stored at room temperature on the cook line Sausage (64F - Cold Holding); Chicken (63F - Cold Holding); Cooked onions (64F - Cold Holding); Pasta (65F - Cold Holding). Owner stated the items were stored at room temperature for approximately 2 hours. Owner placed the items in the reach in cooler.
Toxic substance/chemical improperly stored. Spray bottles containing cleaning fluid stored next to containers of food in the dry storage area. Owner removed the bottles.
Accumulation of black/green mold-like substance in the interior of the ice machine.

Spray bottles containing toxic substance not labeled. Blue and pink substance in spray bottles near dish machine.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. 5x packages of snapper thawing in the package, educated operator on proper thawing and operator discarded the packages.
Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Sanitizer at 0ppm, ran after priming 3 times and measured 0ppm. The 3 compartment sink is setup for sanitization until corrected.
Met inspection standards. 2 violations recorded, none serious enough to require a return visit.
