Ambient air temperature inside the cooler is 47F. The manager and cook both stated they items have been held inside the cooler overnight and have not been removed from refrigeration today.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside reach-in cooler at cookline: chicken (47F - Cold Holding); chicken wings (47F - Cold Holding). Ambient air temperature inside the cooler is 47F. The manager and cook both stated they items have been held inside the cooler overnight and have not been removed from refrigeration today. Stop sales issued. Manager adjusted the temperature of the cooler and discarded both items during this inspection. After, the ambient temperature is 41F.

Employee stated he had the pork in-use at room temperature approximately one hour prior. Manager voluntarily discarded the pork during this inspection.
Toxic substance/chemical improperly stored. Spray bottle containing bleach stored on prep table ar cookline directly beside plastic wrap and above clean dishes. Manager removed the spray bottle from the table during this inspection.
Food-contact surface soiled with food debris, mold-like substance or slime. 1. Buildup of old food on can opener blade. 2. Interior of ice machine door soiled with mold-like substance. Manager cleaned and sanitized both during this inspection.
