Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee changed gloves without previously hand washing.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection.
Handwash sink not accessible for employee use at all times. Observed, hand sink blocked by a garbage can avoiding employees hand washing.
No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Form for written plan provided to the operator. Beef carpaccio for sandwiches must be controlled and recorded in a log temp every 4 hours.
Person in the kitchen unable to answer basic Food Code questions pertaining to safe operation of establishment. Questions related to cooling/ parameters process for cooked chicken.
