Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Sausages held in warmer at 126F. Per employee, sausages cooked 30 minutes prior and placed back on grill and heated to 162F.
Handwash sink used for purposes other than handwashing. Knife and towels stored in handwash sink. Employee removed items.
Opened employee beverage container in a cold holding unit with food to be served to customers. Multiple open employee beverages in cooler with customer's drinks. All employee beverages moved to proper storage.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Wiping cloth solution tested at 0ppm quaternary ammonium. Employee remade solution to 200ppm.

Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee drop sausage on ground, then pick up and throw away. Person in charge changed gloves and handle ready to eat product without hand wash. Spoke to person employee during inspection who removed gloves and washed hands.
Establishment operating with no potable running water. Hand wash sink in 145-146 not functional. Person in charge set up portable hand wash sink with cambro and catch bucket until unit can be serviced. Also, hand wash sink at 149-150 not working. Person in charge able to get hand wash sink at 149-150 working during inspection.
Cardboard box used as garbage container. Observed cardboard box in use as trash container.
Standing water in bottom of reach-in-cooler. Standing water observed in reach in cooler at unit 149-150F. Person in charge began cleaning.
