As per chef, product was being thawed under running water for approximately ten minutes. Chef took product to reach in freezer to rapidly chill. Observed in cooler drawers at cook line under meat grill; Cooked Octopus (56F - Cold Holding); Raw Beef Patty (52F - Cold Holding); Raw Cut Pork (51F - Cold Holding); Raw Marinated Beef (50F - Cold Holding); Raw Salmon (54F - Cold Holding). As per chef products in drawers were there approximately an hour and a half prior. Advised chef to place bags of ice on top of product. Observed in coolers at Prep Area: Raw Sliced Beef (57F - Cold Holding). As per chef, product was there for approximately one hour prior. Manager took product to reach in freezer to rapidly chill.
