Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Portioned Sour cream 65F, portioned yesterday left out at room temperature. Cook stated removed from refrigerator 2 hours ago. Cook placed sour cream back into fridge.
Wiping cloth chlorine sanitizer solution exceeds the maximum concentration allowed 200+ppm in prep area. Cook set up fresh solution at 75ppm.
No soap provided at handwash sink. Cook provided.
In-use tongs stored on oven door handle between uses. Cook removed.
