Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken and cooked fish at temperatures of 110-123F in heating unit across from fryers. Person in charge stated food items were cooked 45 minutes prior and heating unit was set to a lower temperature for breakfast. Unit needed to be changed to lunch setting.
