Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands: observed an employee use a paper towel to pick an item up off the floor, place it in the dish room, and then put on a glove without washing her hands. Inspector informed General Manager. General Manager gave corrective feedback to the employee.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized: observed the three compartment sink sanitizer tested to 0ppm. General Manager emptied the sink and refilled it. Retested to 200ppm.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength: observed the wiping cloth sanitizer buckets tested to 0ppm. General Manager cleaned the buckets and added new solution. Retested to 200ppm.
