In reach in cooler opposite chargrill, ham (48F - Cold Holding), per operator was on counter during rush period. Discussed with operator use of time control, per operator normally is held on time, checked labeling and no discard time present. Operator printed new labeling with discard time.

Raw sewage on ground of establishment. Observed wastewater on the ground around floor drains by the mop sink, cookline and warewashing line. Establishment had plumbing company out to repair block in stain system. Plumbing repair company finishing job at time of arrival. Per operator blockage fixed and wastewater on the ground actively being removed during inspection. Observed floor drains and verified no new backup from the drain system. At conclusion of inspection operator had floor of kitchen mopped and clean of sewage wastewater.
