Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed sausage 130°F hot holding in assembly area. Per manager sausage was prepared just an hour ago. Manager disposed as per company policy dispose after an hour of no use.
Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Observed female employee unable to provide correct answer regarding sanitizing concentration at 3 compartment sink. She provided answer of 500 ppm. Employee was shown the proper range.
Cutting board has cut marks and is no longer cleanable. Observed white cutting board with deep groves stored next to handwashing sink near assembly area.
