Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Raw bacon in walk-in cooler at 50F. Bacon cooked recently and may have been left out of refrigeration. Bacon moved to walk-in freezer and approximately 10 minutes later bacon at 42F.
No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Establishment utilizes time as a public health control for cut lettuce. Cut lettuce is not included on existing written plan provided by manager. Inspector provided updated form(DBPR Form HR 5022-090)and emailed blank form to operator.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Interior of convection oven has grease and food debris build up.

Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Breaker missing at end of splitter for mop sink faucet where red hose is attached. Manager states that breaker will be obtained and placed on.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Creamer in reach in cooler by coffee area in kitchen opened yesterday morning. Creamer dated.
