Sliced cheese was left on counter upon inspector arrival and placed in bottom of flip top reach-in cooler. Operator removed sliced cheese from reach in cooler and placed in walk-in-cooler. Also, blanched French fries (68-77F - Cold Holding) next to fryer. Sticker shows blanched on Sunday. Discussed with operator about TPHC. Emailed paperwork for TPHC. Operator verified their SOP and fries to be chilled after blanching.
