Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In custard machine, vanilla custard mix (48F - Cold Holding) for 30 minutes per operator. Operator turned machine back on, observed cooling begin.
Nothing was found. The inspector recorded no violations at all.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Steam table cooked mushrooms (115F - Hot Holding); cheese sauce (116F - Hot Holding); cooked onions (120F - Hot Holding) for one hour per operator. Operator return all items to grill for rapid reheat, after 2 minutes all foods 178F+.
Accumulation of debris on top of warewashing machine.
Covered waste receptacle not provided in women's bathroom.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Vent covers in walk-in cooler.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer Bucket (Quaternary 0ppm) both in back prep area. Operator replaced all sanitizer buckets, 200ppm quaternary.

Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Approximately 25 around bagged potato storage area near cook line, 4 under beer tap area around drain.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In cook line reach-in cooler drawers net to flat grill: sliced American cheese (47F - Cold Holding); sliced Swiss cheese (48F - Cold Holding); sliced pepper jack cheese (49F - Cold Holding) for 2 hours 30 minutes per operator. Operator iced down foods to aid in cold holding. Also on counter across from fryer, cooked potato French fries (68F - Cold Holding) for thirty minutes per operator. Operator added time stamp with 4 hour discard, provided operator with time as a public health control form and explained use.
