Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Checked dishmachine not sanitizing properly final rinse not reaching 160°f, Manager notify dish machine company. Recommend to use three compartment sink wash, rinse and sanitize until dish machine repaired.
