Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked potatoes (50F - Cold Holding); ground beef (50-53F - Cold Holding); milk (49F - Cold Holding); sliced tomatoes (50F - Cold Holding). Operator corrected removed stated less then he flip a switch earlier in day thinking it was the lights, but was the compressor.
