Blanched fries stored on prep line not time marked. Per operator, item was held less than 4 hours. Operator applied appropriate time mark.

Operator moved items to walk-in cooler to ensure proper cold holding. Carton of half n half (51F - Cold Holding) held in milkshake prep reach in compartment bin for less than 4 hours. Carton extended beyond container fill line preventing proper cold holding. Operator discarded.
