Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired...color get changed after running 3 times running dishmachine.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection... Observed at 4 pm bleached French fries 84F in speed rack at kitchen. Took another temperature at 4:27, fries temperature 82F. Operator removed food to walk in cooler.

Ice level not high enough. Operator added more ice and submerged bottles into ice. At the end of inspection aiolis are 49F.
