Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed cook drink from closed container cup, handling mouth opening with gloved hands. Coached employee on proper glove change process.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. breaded hot dog (90F - Hot Holding); cooked potato chunks (72F - hot Holding); potato covered hotdog (90F - Hot Holding) sitting on counter tops at room temperature.
