Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee at cookline touched hamburger meat with bare hands while placing it onna bun. The hamburger meat is over 145F.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On counter at cookline: cut lettuce (55F - Cold Holding); sliced tomatoes (51F - Cold Holding). Both items are stored in a pan without ice at cookline. Employee stated the items have been held at room temperature for approximately 30 minutes during the rush, then moved them back to the reach-in cooler to cool to 41F.
Handwash sink used for purposes other than handwashing. Bag of shredded cheese stored inside handwash sink at front counter. An employee removed the cheese from the sink during this inspection.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed wiping cloth chlorine 0ppm. Manager corrected to chlorine 50ppm during inspection.
