Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. COOLING - red sauce (55F - Cooling) 9:45am heat cooling since 8:00am recheck 15 mins 55F. Ice bath and ices melted - operator added ice to ice bath and replaced ice sticks.
Handwash sink does not provide water through a mixing valve or combination faucet. No cold water at 3 compartment sink hand sink - operator turned on cold water.
No soap provided at handwash sink. At 3 compartment hand sink.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Cooked sausage prepared 3 days prior not date marked - operator date marked.
Employee wearing jewelry other than a plain ring on their hands/arms while preparing food - employee removed watch.
