Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed their dish machine at 0ppm chlorine. Operator attempted to call ecolab and started to sanitize in their 200ppm quaternary triple sink.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell eggs stored on top of containers of potatoes in the walk in cooler. Operator moved the eggs.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. See stop sale. Observed shell eggs and hollandaise sauce not time marked. Operator stated they have been out for 2 hrs and time marked them accordingly.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed on a steam table: Sausage (105F - Hot Holding) Operator stated they been there for approximately 2hrs. Operator set them in the oven to reheat.
