Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed beef empanadas (115F - Hot Holding); ham croquettes (115F - Hot Holding). As per the cook the items were placed on line approximately one hour ago. The cook turned up the heat on the holding cabinet.
