Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At the buffet area observed, cream cheese (67F - Cold Holding); smoked salmon (58F); turkey (60F - Cold Holding); ham (60F - Cold Holding); cut melon (57F - Cold Holding). Operator stated foods are switched every hour. Operator does not have time as a public health control form at time of inspection. Provided operator with time as a public health control. Operator began to fill out form and time mark foods.
