Raw animal food stored over/not properly separated from ready-to-eat food.Observed in walkin cooler, raw salmon over cooked meatballs. Cook rearranged food items to prevent cross contamination.
Cutting board has cut marks and is no longer cleanable.Observed yellow cutting board with black stains and cut marks.
Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized.Observed dishes being sanitized in water third compartment. Sanitizer hose was directed into center sink. Educated dishwasher as to correct order and corrected by setting up triple sink in correct order.
