Commercially processed reduced oxygen packaged grouper bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Educated operator on proper thawing method. Operator had employee cut open packaging to allow oxygen flow.

Per operator, food not prepped or portioned today; food stored in cooler for approximately 2 hours. Operator put food inside walk in freezer to quick chill. 2) Observed cooked chicken wings (59F - Cold Holding) at fry station at cook line. Per operator, food not prepped or portioned today; food stored in top portion of cooler, over-stacked. Operator had cook remove half of the container of chicken wings and put inside walk in freezer to quick chill. 3) Observed wedge tomatoes (56F - Cold Holding); feta cheese (55F - Cold Holding); goat cheese (55F - Cold Holding) inside pantry flip top cooler. Per operator, foods not prepped or portioned today; foods held in cooler for approximately two hours. Operator moved foods to walk in freezer to quick chill.
Clams/mussels/oysters tag removed from original container prior to container being emptied. Observed tag removed from batch of oysters inside walk in, stored at cook line. Operator properly stored.
