Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside bottom of refrigerated make-table: hotdogs (45F - Cold Holding). Manager stated she believes the hotdogs were used by an employee earlier this morning. Inspector had manager move the hotdogs to a freezer to rapidly cool to 41F. ham (56F - Cold Holding). The ham was sitting on top of the pans inside the refrigerated make-table, above the safe load line. Manager stated the ham was purchased this morning. Inspector had manager move the ham to a freezer to rapidly cool to 41F.
Cutting board has cut marks and is no longer cleanable. Cutting board at refrigerated make-table has deep cut marks.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside container on prep table in kitchen: sliced tomatoes (73F - Cold Holding). Manager stated the tomatoes were sliced approximately twenty minutes prior and placed on counter to use until 2pm. Inspector provided operator with TPHC paperwork.
No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. No proof of any training for establishment. Manager stated employee has been employed for 60 days.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Two employees working in kitchen who have not been informed of their health reporting responsibilities. Inspector provided new health reporting agreement to manager during this inspection.

Food storage container/container lid cracked or broken. One cracked plastic pan on shelf above three-compartment sink. Manager discarded pan during this inspection.
Unwashed fruits/vegetables stored with ready-to-eat food. Unwashed bell peppers and lettuce on shelf above chicken salad inside reach-in cooler in storage room. Manager moved unwashed produce to bottom shelf during this inspection.
Wet mop not stored in a manner to allow the mop to dry. Wet mop stored down inside mop sink. Manager hung mop outside during this inspection.
