Food not stored at least 6 inches off of the floor. Observed cases of tomato sauce sitting on the floor in the cooking area.
Time/temperature control for safety food thawed in an improper manner. Observed chicken sitting in standing water, water must be flowing in order to properly thaw and temperature of the chicken should not increase over 41F. Operator corrected and turned water on.
