Stop Sale issued due to food not being in a wholesome, sound condition. Cold hold- upright freezer - reduced oxygen packaged guacamole. Establishment vacuumed seals guacamole with out a HACCP.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Cold hold- upright freezer - on site reduced oxygen packaged guacamole.
Frozen time/temperature control for safety food being slacked at room temperature is no longer frozen solid. Thawing- chicken 55F ( 11:00-11:48). Employee placed chicken in cooler.
