Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Operator cracked raw eggs and then proceeded to reach for flour tortillas. Inspector intervened and educated operator on the importance of changing gloves, and washing hands after cracking raw shell eggs do to the transfer of Operator removed gloves and washed hands.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach in cooler under coffee machine: milk (45F - Cold Holding); half and half (45F - Cold Holding); whipped cream (45F - Cold Holding) temperatures taken at 9:20 am. Manager moved to reach in freezer. Temperatures taken again at 9:50 am: milk 40 F, half and half 38 F, whipped cream 41 F.
