Stop Sale issued due to food not being in a wholesome, sound condition. Observed : ice in the ice maker bin, full of water that had not drained. The machine was turned off.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : in the cook line tabletop reach-in cooler: marinated shrimp 49°, mahi 49°, butter pats 50°. Items moved to ice baths and freezers. Mahi was 37° in 14 minutes, shrimp was 41° in 14 minutes. Butter was late being put in the chest freezer.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Observed lack of back flow device on the non chemical side of the splitter in the mop sink.
No soap provided at handwash sink. Observed lack of soap at the private bar.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed : the tabletop reach-in cooler at the far end of the cook line was not holding any time/temperature control for safety food placed in there just before opening(12:00 noon) at 41° and below. Items were moved to ice baths and freezing units.
Dishware/utensils not soaked prior to being placed in three-compartment sink/dishmachine and results in soiled dishware/utensils after washing occurs. Observed : 2 plates on the wait station line, still soiled after being washed. These were moved to the dish area.
Waste line missing at soda gun holster. Observed : waste drain line for 2 soda guns were not connected. One was reattached.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : walk-in cooler milk 45°, pico 47, Al pastor 47, cc mix 47, chip Rojas 47. All time/temperature control for safety items moved to the beer walk-in cooler. ALSO, at the wait station area sour cream 59°. This was set up at 12:00pm, ice was still in the pan below, but was no longer touching. Ice was re-added to the top of the pan.
Employee eating in a food preparation or other restricted area. Observed : cook line staff eating on the cook line. The manager directed to remove food and drink from the cook line and they did.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed at the bar, both ice scoops with handle touching the ice. Ice scoops removed from the ice bins.

Chlorine sanitizer in spray bottle/bucket not at proper minimum strength. Observed: 0 ppm for quaternary amonia in a red pail. The dispenser was not functioning. The staff titrated until 350 ppm for quaternary amonia.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the soda nozzles have buildup.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed: employee drinks stored on a prep table and the ice maker cove. Some drinks were moved away.
In-use tongs stored on equipment door handle between uses. Observed: multiple tongs on the equipment handles protruding into the walkway. These were placed on a clean surface.

Floor area(s) covered with standing water. Observed: standing water on the floor at the window bar.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed: ice build up in the walk-in freezer on the right side.
Waste line missing at soda gun holster. Observed: at the Private event bar, the first soda gun holster was lacking a drain line. The line was reattached.
Water leaking from pipe and/or faucet/handle. Observed: at the main bar, water on the floor by the first hand wash sink.
Propane tank (larger than 2.7 lb. water capacity/1 lb. gas capacity) located inside of the building. For reporting purposes only. Observed an LP tank stored upstairs. Staff moved it ti an outside vehicle.
