Displayed food not properly protected from contamination. Cookies and cakes on buffet with no protection. Employees moved items under sneeze guard at time of inspection.
Hand wash sink in dish area leaking. Operator placed bucket under sink to catch water.
Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Maximum temperature of 152F at dish surface in dish washer.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw chicken over raw scallops in upright reach in. Manager moved chicken to bottom during inspection.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed mashed potatoes at 125F. Employee states 1 hour. Reheated to 168F.
Old labels stuck to food containers after cleaning. Observed old dates left on pasta salad container and macaroni salad container. Employee removed labels.
