Employee switched from working with raw food to ready-to-eat food without washing hands. Observed employee with gloved hands on cook line handling raw chicken, remove gloves and begin placing on new gloves. Intervened and had employee wash hands.

Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dishmachine only reaching 147F during inspection. Person in charge will utilize triple sink at 200ppm Quatanery ammonium until unit can be serviced.
